  2. To the chicken add the wine, garlic, salt, pepper, bay leaves and lemon juice and mix it all together. Set it in the fridge for about 3-4 hours in the marinade.

  4. In a large non-stick frying pan heat the olive oil and butter on a medium heat.
  5. Once heated add the chicken pieces. Cook for about 10-15 minutes if thinly sliced (add an extra 5-10 minutes if thicker), turning over after every 5 minutes.
  6. If its starting to dry add some more olive oil and butter to the pan.
  7. I normally have to do two batches in the pan as it doesn't all fit in one. so I normally add the garlic pieces to cook on the second batch and cook them for about 15 minutes.
  8. Add all the chicken pieces back into the pan and add the rest of the marinade and cook for a further 5-8 minutes.
  9. Let it rest for 5 minutes before serving.
